Put the chicken legs in a large stock pot and fill with boiled water from the kettle. Chicken Pieces with Nuts and Root Veg. Strain the broth through a sieve, discarding the solids, then leave it to cool. To make the soup, peel and/or trim the onion, leek, celery and carrots, then roughly chop along with the courgettes.

  4. To the veg mixture add tinned tomatoes and stick and bring to the boil then reduce to a simmer for 30mins until everything is nice and soft. Add chicken and cook for a further 5 mins
  5. Blend if you prefer or leave it chunky, serve with fresh crusty bread 🥖
