  10. Make ready 2 tsp coriander seeds
  11. Get 1/2 tsp cumin seeds
  12. Prepare 1 inch fresh turmeric root peeled and chopped or you can use 1 tbsp turmeric powder
  13. Make ready 1 inch fresh ginger root - peeled and chopped
  14. Get 4-6 red bird eye chillis
  15. Prepare 1 stalk lemongrass - finely sliced
  16. Prepare 3 cloves garlic
  17. Prepare 2 tbsp cashews
  18. Prepare 1 tsp lime juice
  19. Take 1 tbsp shrimp paste
  20. Prepare 3 cups veggie broth or water
  21. Prepare 1 can coconut milk about 1.5 cups and can add some more water if needed
  22. Get 1 lime - cut in wedges

Heat oil in a large saucepan over medium-high. Shake in a few drops of Thai or Vietnamese fish sauce.
