This is a simple and delicious chutney which goes well with all south indian breakfast dishes. We are fond of coconut chutney and sambar served with idli, dosa and vada. In fact my mom-in-law who is actually a Punjabi, loves South Indian food, especially masala dosa, idli, sambar and rasam. All other South Indian recipes made with coconut are her favorite.
Steps to make Idli Sambhar with coconut Chutney:
- FOR IDLI:- Wash and soak dal rice in different vessels for 5-6 hrs. Grind and ferment for 6-8 hrs. After 8 hrs beat well, add salt and pinch of soda. Mix well. Add 2-3 tbsp water if needed. Grease idli stand and boil 7-10 min. Idli is ready.
- For Sambhar :- wash and soak dal tur dal. Add fenugreek seeds and turmeric powder salt and wait for it to whistle 5-6 times. Open the lid. Heat oil in a pan for tadka, add mustard seeds, dry red chilli, slited green chilli, asofoetida and all veggies, curry leaves, green chilli, dry red chilli, asofoetida and thenfor saute 5-7 min. Add red chilli powder, sambhar masala, Salt and add 1/4 cup water. Add in dal. Add 1/2 glass water cover and cook for 10 min on slow flame. Sambhar is ready.
- FOR CHUTNEY:- Mix coconut, ginger, chilli, salt, roasted chana gram, sugar and curry leaves. Churn and then add 1/2 cup water. Churn again. Make tadka with urad dal, mustard seeds, asofoetida. Ddd on a chutney. Chutney is ready.
