- Soak the ingredients of mustard paste for 30 minutes in lukewarm water.
- Grind the soaked ingredients of mustard paste by adding required amount of water to a fine paste.

- Heat mustard oil in a wok. Add hing powder and panch phutan seeds to crackle.
- Now add chopped garlic and sauté for 1 min in low medium flame.
- Mix chopped onion and curry leaves and cook till the onion translucent. Add chopped tomatoes, 3 tbsp bamboo shoots and adjust the salt. Cook for 3 min or till bamboo shoots is cooked and tomatoes are softened.
- Add water to make the gravy. Put the veggies. Mix well. Cover and cook for 2 mins in low medium flame.
