The dahi vada we have here in the udupi restaurants has sugar in the dahi (curd). I will try to add this restaurant style recipe of thayir vadai too. The thayir vadai shared here is more of a tamilian style preparation and does not use sugar. but if you like some sweetness in the curd, then you can add. I do not order curd vadai at restaurants as once I had bad experience eating sourest curd vadai.

I am a big big fan of Tamil nadu style thayir vadai. I love this South Indian style dahi vada more than sambar vadai & rasa vadai. My FIL used to buy thayir vadai/Curd vada ( Perugu vada in Telugu) from hotel Saravana bhavan and Guptha sweets whenever we visit Salem. When you add curd-yogurt to soaked vada, make sure its not too hot. You can use left over. finally, enjoy mosaru vada / thayir vada chilled.
