  1. Make ready For nylon khaman dhokla
  2. Take 1 cup chana dal flour(Bengal gram flour)
  3. Take 11/2 tbsp semolina/ rawa

  6. Make ready 1 tbsp lemon juice or 1/2 tsp citric acid crystal

  9. Prepare 1 tbsp eno salt

  11. Make ready 4 tbsp oil
  12. Take 1/2 tsp mustard seed
  13. Prepare 1 pinch asafoetida
  14. Prepare 1 tsp white sesame seeds
  15. Get 6-8 curry leaves
  16. Prepare 2 tbsp green chillies ginger paste
  17. Make ready 1/2 cup grated fresh coconut
  18. Get 1/2 cup finely chopped coriander leaves
  19. Take 1 cup besan sev
  20. Make ready As needed Pomegranate kernels
Steps to make Amiri Khaman:
  1. Mix chana dal flour & semolina in bowl,add & mix salt, sugar, lemon juice and oil. Pour water and make smooth mixture. On gas keep big vessel..in it pour enough water. In middle keep round ring stand for keeping tin on it. On the flame Grease square tin with oil. Place this grease tin on round ring stand
  2. In flour mixture add eno salt,and mix in one direction..the mixture will be double & fluffy. Pour this mixture immediately in grease tin.
  3. Cover the vessel with lid with thin cotton cloth tied to it. Steam dhokla for 12 mins on medium flame.
  4. Cool nylon khaman dhokla completely.
  5. Break the dhokla pieces… with hand into coarse mixture. In kadhai add heat oil, do tempering of mustard seed, sesame seeds,curry leaves, asafoetida, green chillies ginger paste..saute for 1 minute.
  6. Add prepared coarse khaman mixture. Mix well.
  7. At the time of serving add prepared Amiri Khaman in serving plate on it sprinkle besan sev, grated coconut and garnish with chopped fresh coriander leaves and pomegranate kernels. Serve immediately.
  8. Tip..if you to make garlic flavour..add garlic paste in batter at the time of making dhokla.
