- Take 1 cup gram flour (besan flour)

- Make ready 2-3 tbsp water

- Get Handful pomegranate seeds

- Make ready As required chopped coriander leaves
Sev Khamni is traditionally made from Dhokla and also known as Amiri Khaman. Seasoning adds classic tastes in Sev Khamni. Try this Surti Sev Khamani, a Gujarati recipe made with chana dal and well garnished with sev. The appetizer has a crispy-crunchy texture.
Instructions to make Gujarati Sev Khamani:
- Sieve the gram flour and semolina in a bowl. Add all the ingredients except eno and lemon juice. Whisk the batter for 5 minutes making sure the batter is lump free. Keep aside the batter for 15 minutes.
- Add eno and lemon juice to the batter and mix gently. Pour the batter into a greased container and steam for 15-20 minutes.
- After 15-20 minutes check if its cooked using a toothpick or knife.
- Let the dhokla cool then break it coarsely and keep aside.
- Now for tempering, heat oil in a pan, add mustard seeds and let it splutter. Then add hing, cumin, curry leaves, chilli, sesame and water.
- Add the dhokla and powder sugar and mix well. Cook for a minute and turn off the flame.
- Lastly, garnish with coriander leaves, pomegranate and sev. Serve hot.
