- In a large pan, heat some oil and brown the onion.
- Add the chicken thighs and brown.
- Add the red pepper and cook for a few minutes. Reserve a little bit of chicken and red pepper.
- Add the chciekn stock and curry leaves. and bubble away for mins.
- Add the rice and mango, heat through, add the mint and blitz with a hand blender. (reserve a bit of chopped mango)
- Taste and season with sdalt pepper and lemon juice.
- Pop into warm bowls and garnish with some of the reserved mango, chicken and pepper and a drizzle of oil.
