The ingredients needed to make Soya Chunk Rice:
- Make ready brown rice, boiled
- Make ready peas, frozen
- Get capsicum, chopped
- Take soya chunks, raw
- Make ready onion, chopped
- Get curry leaves
- Get green chillies
- Make ready turmeric powder
- Make ready black pepper
- Get roasted cumin seeds
- Get red chilli powder
- Take Salt
- Take ghee
Steps to make Soya Chunk Rice:
- Boil 2 cups water in pan and add a pinch of salt to it, followed by raw soya chunks. Let it boil for a min. Turn off the flame and cover with lid for 20 mins.
- After 20 mins, drain the water & let it sit on sieve for a min or two. Now squeeze out the excess water from chunks and keep aside.
- Heat ghee in pan, fry onion until translucent. Add curry leaves & green chillies, saute for 30 secs.
- Add soya chunks and peas into pan and stir for a min.
- Now add capsicum followed by turmeric, black pepper, red chilli powder, cumin seeds and salt. Mix well.
- Cover with lid and let it cook for 2-3 mins on low flame. Stir ocassionally.
- Now add brown rice to it and mix it well with veggies.
- Cover with lid for a min(low flame) Stir it for 30 sec on high flame and then turn off the flame. Serve hot with curd or chutney.
