  5. Then add the chopped curry leaves, cook for another minute.
  6. Add the rice and give it a nice mix. But be gentle as the rice can break.
  7. Lower the heat, add salt, lemon juice and lemon zest. Mix again. Remove from heat.
  8. Garnish the rice with fresh coriander leaves and lemon slices.
