- Soak the tamarind into water for 10 mins…
- Cut the brinjal and Ladies finger each into 4 pcs. Add some gingelly oil in pan and fry the vegetables for 5 min till it turn to brown & keep it aside…
- Add the shallots/ cina Vengayam and garlic in the same pan and add little gingelly oil into it.. Fry the onions and garlic until it turns into translucent…
- Now add 2tablespoon of sambar powder and 1 tablespoon Chilli powder into it… keep the stove in medium flame…Fry the masala for 1 min and add the chopped tomato into it…Fry untill the tomato gets smashed…
- Once the tomato’s are well cooked add all the brinjal and ladies finger..add the tamarind extract into the pan and mixed it well… Add salt for as per the taste…
- Let it boil for 5 min and change the kulambu from pan to another vessel..add some oil into pan and add seasoning ingredients give a little fry & add this into the dish..add some fresh sprinkle of coriander leaves and served as hot for rice….
