I used to just sprinkle curry powder on a piece of chicken or some vegetables and wonder why it didn't have the depth of flavor that I associate with curry. Add potatoes, peas, turmeric, red chilli powder and salt. Add ½ cup water and bring it to a boil.

- Mix and turn off the gas, add chopped coriander leaves, green chilli and serve.
