  1. Cut the egg into two pieces. - Finely chop the onion, tomatoes and green chilli.
  2. In a pan, heat oil and add mustard and fennel seeds. - Once it splutters, Add the onion and saute well.
  3. After that add curry leaves and spring onions and saute well. - When onion turns golden colour, add the tomatoes, chilli. Saute for a minute and cover the pan and cook in medium flame about 5 mins.
  4. Now add the turmeric powder, chilli powder, hing, garam masala powder, pepper cumin powder and salt. Mix well and cover the pan and cook in medium flame about 10 mins.
  5. After that add the boiled eggs and stir well till the masala coated in the egg. Add little more cumin pepper powder.
  6. Spring onion egg roast is ready.
  7. Switch off the flame and garnish the egg masala with coriander leaves.
