Pesaha Appam or Inriyappam or Kurisappam is the unleavened Passover bread made by the Saint Thomas Christians of Kerala, India to be served on night of Maundy Thursday. The white-ish Pesaha appam is a firm rice cake. Appam are tasty soft hoppers and a popular Kerala breakfast. Known as appam or palappam these are served with vegetable stew or kadala curry.

The ingredients needed to make Palak and carrot appam:
  1. Prepare 1 cup chopped spinach
  2. Make ready 1 grated carrot
  3. Make ready 1/2 cup crushed sprouts
  4. Take 1 chopped green chilli

  6. Take 1 cup suji
  7. Prepare 1/2 cup curd
  8. Make ready to taste salt
  9. Make ready 1 tsp rai
  10. Get 1 spring curry patta
  11. Get 2 tbs oil
  12. Take 1 tsp eno

Then remove the vessel from the heat and let it cool (for palak chapati). Rice, urad dal and fenugreek seeds as main ingredients. This is my way of making appam, we all like it to have with coconut milk sweetened with jaggery and flavoured with cardamom! This may not be the authentic way of making appam with yeast or coconut/coconut.

Instructions to make Palak and carrot appam:
  1. First take a bowl add suji, PALAK, carrot,ONION,GREEN CHILLI,SPROUTS, CURD. Mix it well.
  2. Add 1/2 CUP WATER and SALT. Mix it well.
  3. Rest it for about 1/2 hour.
  4. After 1/2 hour mix BATTER again.
  5. Add ENO and mix it well.
  6. Heat Appa pan add few drops of OIL in each mould, add some rai.
  7. When rai crackle pour 1 TBS BATTER into Appa moulds.
  8. Cover and cook it for 3 to 4 Minute on low flame.
  9. After 4 minute flip Appa and again cook it for 3 minute.
  10. After 3 minute switch off the flame and take out Appa in a serving plate.
  11. Serve with COCONUT and CORIANDER chutney.

This is my way of making appam, we all like it to have with coconut milk sweetened with jaggery and flavoured with cardamom! This may not be the authentic way of making appam with yeast or coconut/coconut. Appam is a spongy, lacy pancake prepared with fermented rice batter. Appam is served for breakfast with sweetened coconut milk, kurma or stew. I am a big fan of Kerala's soft, lacy, spongy appams.
