Ilish mach bhaja (hilsa fish fry), Ilish mach bhaja tel and Begun diye Ilish macher jhol (Hilsa fish curry with eggplant) and hot steaming rice. Shallow fry the Hilsa fish pieces, till golden brown. Steps to make Ilish (Hilsa) Fish Curry:
  1. Wash the fish well and marinate with 1/2 tsp turmeric powder and salt.
  2. Heat a non-stick frying pan/ skillet with little oil. Spread it evenly. Gently place the fish pieces and fry them from both sides until golden brown on a low medium heat. During frying, the ilish will release oil of it's own. So you need not add much oil as required to fry in the case other fishes.
  3. Once done, remove the fish from the pan and keep aside.
  4. In another pan heat remaining oil. Add 1 tsp sugar. When sugar starts to caramelize, add chopped onion and fry till brown. Add red chilli powder, turmeric powder and saute for few seconds. Next, add onion paste, ginger garlic paste, cumin powder, coriander powder and salt. Saute for a couple of minutes till oil starts to ooze out from the sides.
  5. Then add chopped tomato and cook till it is soft and mushy.
  6. Next, add potatoes and saute for a minute or two. Add one and half cup of water, cover and cook for 4-5 minutes.
  7. Now add the fried fish, stir well and cook covered for 10-12 minutes or till the curry reaches a desired consistency.
  8. Finally add the garam masala powder and chopped coriander leaves. Cover and turn off the flame.
  9. Serve Ilish Fish Curry hot with plain rice.
