- Get 2 tbsp coconut oil
- Prepare 1 tsp mustard seeds
- Get 1 pinch asafoetida
- Take as needed curry leaves
- Take 1/2 inch ginger finely chopped
- Prepare 2 green chillies finely chopped
- Get to taste Salt
Steps to make Appam with Veg Stew:
- Wash and soak raw rice for 3-4 hours. Drain.
- In mixer jar add soaked rice,boiled rice,1/2 cup of coconut milk. Grind to smooth mixture.
- Remove this rice mixture in vessel,add sugar,11/2 cup of coconut milk and salt. Mix well.(Mixture should be pouring consistency)
- Add little lukewarm water to yeast. Cover for 10 mins.
- Add this dissolved yeast mixture in prepared rice batter.
- Keep cover for 3-4 hours for fermentation.
- To prepare Veg stew. Blanch chopped french beans, carrot, cauliflower,peas. Keep aside.
- In kadhai heat coconut oil, add mustard seeds as they splutter add asafoetida and curry leaves.
- Add chopped onion, chopped ginger and green chillies..saute for 2 mins.
- Add blanch mix vegetables, cashewnuts paste. Mix well.
- Add coconut milk, salt and simmer for few minutes. Ready to serve.
- To make appam… Heat appam pan, grease lightly with oil. Pour a laddleful of rice batter into it.
- Slowly rotate kadhai in circular motion so that thin layer forms on side and in middle remain thick.
- Cover and cook for few minutes on high flame.
- Serve Delicious Appam with Vegetables Stew.
