Butter beans are one of my favourite beans. They are hearty and - for want of a better word - buttery. Their starchiness works well in this tikka curry, but if you prefer a different bean, feel free. I love curries in the cooler months and the last few days have cooled down as we are now in our Autumn in Australia, no more summer fun for us!

Instructions to make Butter beans curry:
  1. Heat a pan with oil in it. and add in the chopped green chilli along with ginger garlic paste. Let it cook for about 1 min, till it gets aromatic.
  2. Add in the sliced onions, and cook till they start sweating.
  3. Add in the beans along with tomato paste and 1/2 cup water. Cover and cook for 5-7 mins.
  4. Add in the cherry tomatoes along with red 🌶️ chilli powder, salt and garam masala.
  5. Let it cook for another 4-5 mins. Don't let the tomatoes get mushy. cook till they have a bite to them.
  6. Add in the chopped spinach🥬 and mix everything thoroughly. Let it simmer on medium heat till the spinach withers. Serve hot along with some roti or naan.
