Steps to make Ramen:
  1. Take spring onion,basil,green chilli,curry leaves,bay leaf,mint & tied together.this is called Bouquet Garnie.fill pot with water,add chicken pieces,ginger garlic cinnamon staranise & let it boil.
  2. Once the chicken flesh is soft & water is reduced.turn off heat,strain broth.take out greens, cinnamon,staranise,ginger garlic.
  3. Add soya sauce,chicken powder,blackpepper,salt in broth & let it simmer at low flame.taste & adjust seasoning.
  4. Slice mortedella in rounds.heat grill pan,brush vd oil.grill mortedella pieces.make glaze by mixing brown sugar in soya sauce.
  5. Apply this glaze on both sides of mortedella & grill it 2 min each side.
  6. Cut bread slices in squares & crisp fry in hot oil.drain on paper towel.hard boil egg,peel, cut in half.
  7. Boil Instant Ramen noodles according to packet instrutions.I hv added 1 staranise for aroma & flavour.when almost tender, drain noodles & keep aside covered.
  8. For assembling, take a deep bowl.place noodles in middle. Pour hot broth around.place egg halves,croutons,tomato cubes over noodles.garnish with basil leaves,chop spring onion (green) lemon wedges. season with salt,red chilli flakes,black pepper & grated feta cheese.
  9. Enjoy resturant style hot ramen bowl in comfort of home with cookpad.
