- Prepare coconut milk by grinding grated coconut with a little water. Squeeze the milk out and keep it aside. Grind grated coconut by adding a little water in a mixer grinder. When the mixture is coarse, add mustard seeds and green chillies to it and grind to a fine paste.
- Cook diced pineappe pieces, banana pieces, pumpkin pieces and tomato pieces in water by adding turmeric powder, red chilli powder, salt and curry leaves.
- When the vegetables and fruits are cooked, add jaggery to it and cook till no water remains.
- Add coconut milk, grinded coconut paste and curd to the vegetable mixture and boil.
- When the mixture boils, turn off the flame and add grapes to it.
- Heat oil in a pan and add mustard seeds to it. When the mustard seeds splutter, add red chillies and curry leaves and roast. Add this seasoning to the pachadi.
