- Wash and marinate chicken by applying salt, lemon juice or curd as per your choice. Keep it for 1/2 hour if possible.
- Take a pan, dry roast Coconut powder, take it out.
- Fry sliced chopped Onions for 2 minutes, add coriander seeds, cinnamon stick, Rock flower, Star Anise, cumin seeds, curry leaves and Dried Red chilli.
- Roast all ingredients till it turns brown.
- Let all ingredients cool completely.
- Make a fine paste by adding water.
- Take a kadhai, heat oil as per your choice.
- Add bay leaves,1/2 tbsp cumin seeds, ginger garlic paste, turmeric powder, coriander powder, Red chilli powder (already ground red chillies so keep in mind)
- Saute for 1 minute on low flame.
- Add finely chopped tomatoes and cook till soften.
- Add marinate chicken,add some salt(already salt is added while marinating so keep in mind)
- Mix well, cover and cook for 5-10 minutes on medium heat.
- Add prepared masala paste, mix and cover and cook for 5 minutes on medium heat.
- Add water and adjust gravy as per your choice.
- Or you can enjoy Sukka Chicken masala without gravy.
- After adding water, add some chicken masala powder or garam masala powder if you want. Otherwise, you can skip.
- Cover and let it boil for 5 minutes on high heat.
- Turn off gas flame.
- Sprinkle some fresh coriander leaves.
