Potato skins, also sometimes referred to as potato jackets, are a snack food or appetizer made of unpeeled potato halves, hollowed and dressed with bacon, cheddar cheese and green onions before being baked again. These potato skins easy to make. Some approaches call for deep frying, but I don't think it is really necessary. You just want to bake the skins at a high enough heat so that they get crispy enough to hold the toppings.

The ingredients needed to make Potato skins:
  1. Get 20 g cheese
  2. Prepare 3 large potatoes
  3. Get 2 chopped spring onions
  4. Get Black pepper
  5. Get 60 g low fat cream cheese
  6. Get Sea salt

This is a great recipe as written but I played with it just a little and was CRAZY happy with the result. Anyway, potato skins are a nostalgic snack for me.

Instructions to make Potato skins:
  1. Bake potato for approx 1 hour on 180 then leave to cool slightly.
  2. Next cut the potatoes in half and scoop out the insides into a bowl leaving the skin whole. Mash the potato and spring onions and cheese (add any other ingredients you might want to add in) you can add some milk and butter to help mashing, or cream cheese. Season as you like with salt and pepper.
  3. Place the empty potato skins on a baking tray and scoop the mash back into the shells. Grate Parmesan over the top and put back into the over for around 15-20 mins. Take out when golden brown over the top.

This is a great recipe as written but I played with it just a little and was CRAZY happy with the result. Anyway, potato skins are a nostalgic snack for me. And nostalgic snacks, I think I've established, are the very best kind of snacks. And they never, ever go out of style. Unless you're talking about deviled ham balls.
