- Heat a pan.
- Add chhena and sugar, stir for sometime.
- Add condensed milk, stirring continuously. Keep aside.
- Combine flour, butter,brown sugar, yeast, pumpkin spice in a bowl.
- Mix with flour until the butter is well incorporated.
- Once the butter is mixed with the flour, add salt.
- Now Add pumpkin pulp and mix very well.
- Add warm water in it and make a soft yet non sticky dough.
- Scoop out the dough on a flattened surface.
- Knead the dough again and again.
- Grease the bowl with butter.
- Place the dough and brush the dough with butter.
- Cover it for an hour or until gets double in size.
- As it doubles in size, remove the cover and flatten the dough into a thick circle and divide into 8 equal portions.
- Shape it like a balls and flatten it to a roti.
- Place the chhena in it and lift one side of the edge and bring to the centre.
- Then start folding the sides and join at the centre carefully thus sealing the chhena.
- Shape it like ball again.
- Place the twine on the surface.
- Take a ball in it's centre and make a knot in middle.
- Shape it like pumpkin with the help of twine.
- Cover the pumpkin buns at room temparature until it doubles up in size.
- Now brush them with liquid milk.
- Bake in a preheated oven at 180 degree celcius for about 20 mins.
- Brush the hot pumpkin buns with melted butter.
- When the are cool, remove the twines very carefully.
- Place a akhrot in the centre of each bun.
