- On medium heat, melt butter and add flour.
- Whisk until incorporated and cook until light golden color. Up to3 minutes.
- Add in sage. Slowly add chicken stock and whisk to insure no lumps.
- Add in gnoochi and cook for10 minutes.
- Bring to boil then remove from heat.
- Add in 1cup of mozzarella and 1 cup asiago cheeses.
- Stir until cheese is melted and creamy.
- Add in lemon juice. Place in baking dish, add last amount of cheese on top and cook for 25 minutes in a preheated 350°F oven.
- Place under broiler for just a minute or two the brown top.
- Serve alone or as side dish. A great addition would be 1 cup thawed spinach, drained of liquid or 1 cup thawed broccoli.
